RECIPE: PINEAPPLE FRIED RICE

Pineapple Fried Rice has a delicious taste. Flavoured with pineapples, this savory, sweet and spicy delicacy will literally send you nuts. You should serve it in hollowed out pineapples for a beautiful presentation.

Ingredients

For 5 servings

  • 400g long grain rice
  • A big size of pineapple
  • 1kg turkey or chicken
  • 3 large carrots
  • 1 handful peas and runner beans
  • 2 large green pepper
  • 2 onion bulbs
  • 3 tab spoonful curry powder
  • 1 teaspoon ginger powder
  • 3 gloves of garlic
  • ⅔ spoonful black pepper
  • 3 cooking spoonful vegetable oil
  • 3 stock cubes
  • Salt to taste

The cooking process

I. Pour the cooking oil in the pot.

II. Fry the rice on low heat till it turns golden brown.

III. Pour the chicken, turkey or meat stock and leave to boil for 3 minutes.

IV. Add curry, thyme, seasoning, salt, and all other spices to taste.

V. Boil till tender soft and leave to cool.

VI. Pour the already diced carrot, peas, green bell pepper, and liver or meat into a pan and fry on low medium heat.

VII. Add black pepper, garlic, curry and seasoning to taste.

VIII. Add the fried ingredients into the rice in small portions till done.

IX. When properly mixed, leave to steam with onions for 3 minutes.

X. Dice the pineapple and pour stir into the pot of rice and cover with foil for 5 minutes.

XI. Serve and enjoy in your well cut pineapple peel.
